Brandy (short for brandywine, from Dutch brandewijn - burning wine) is a general term for distilled wine , usually 40 - 60% alcohol by volume.
Our premium Brandy is made by distilling specially selected wines, (predominantly Pinot Noir) from the Great Southern and Margaret River regions of Western Australia, using a double distillation process in traditional copper pot stills, followed by the minimum legally required period of two years in oak. Our Brandy is not due for release until 2008.
Our Brandy is aged using the Solera System. This is a traditional Spanish manner of aging sherry but is also used by some producers for aging brandy, and involves aging in 3 casks each with progressively older spirit.
Our 4,500 L antique French Brandy Still has been retrofitted and is now installed at our Margaret River distillery to once again produce only the finest Brandy.
