We release only single barrel expressions of single malt whisky. Each expression is different.
Barrel M11 - "the dark one"
our routine barrel sampling has revealled this fantastic whisky is ready and we have decided to release this, our fourth expression of single malt whisky, now. This single malt whisky spent time maturing in a refill house French Oak ex-brandy cask before being re-racked into a refill American Oak house second fill whisky cask. This whisky is a darker golden colour and has a more complex nose than our previous releases and is a great sipping whisky. Barrel M11 is available online and at our Cellar Door for $120 a bottle.

This was released in August 2008. Tasting notes include:
"
Exhibiting vanilla, floral and citrus when neat, a splash of water reveals raisins, malted barley, aromas of cinnamon and candied orange peel with hints of mocha and butterscotch."

Barrel M9 - "the first innings"
is now being married with spring water and will be released shortly. This is a fantastic whisky displaying some superbly complex malt and toasted raisin characters. This whisky will be released in 2 "innings". We have decanted half of this barrel now which will be bottled and available shortly. The remaining 90 or so litres will be transferred to a 'quarter cask' which our coopers have made to our specifications from a second fill bourbon barrel. The second innings - "stumps" will be released some time in the future. This lovely whisky offers the whisky appreciator and the collector a unique opportunity to experience one batch of malt whisky in two expressions. The First Innings will be available shortly online and at our Cellar Door for $150. This is a limited bottling and is expected to sell out quickly.

Limeburners Single Malt Whisky - Western Australian History
We are the only Malt Whisky Distillery in Western Australia. In April 2008 we released the first (legal) Single Malt Whisky in Western Australia's history.
Our first release
was from "Barrel M2
" - the second barrel of Whisky we ever filled. This Whisky displays fantastic complex characteristics and was awarded a Bronze Medal
at the 2008 International Wine and Spirits Show in London
. For our first release Whisky this is an outstanding result.
There were only 338 hand numbered bottles in our first release, and we sold out
in less than 5 weeks. (We do have 20 bottles stored safely away in our "Whisky library", but none of these are intended for retail sale.) Our first release went to Australia, the US and Europe, and final prices were up to AUD$500 a bottle - which reflects the scarce nature of this truely Premium Single Malt Whisky.
We only release Single Malt Whiskies from carefully chosen individual barrels. This makes each of our Whiskies unique and available in strictly limited quantities. Our second release - Barrel M5 has also sold out.

The Equipment
By world standards we are a tiny operation... which is the way we like it.
Our 2 Whisky Stills, an 1,800 litre Wash Still and a 580 litre Whisky Spirit Still, are in operation in our Albany distillery. Our Whisky Stills are traditional Whisky Copper Pot Stills and were custom made in Hobart, Tasmania, by Australian Still makers Knapp Lewer. We selected the parameters for these Stills to achieve a particular Spirit profile. This decison was made after lengthy research on Stills used by the distilleries producing our favourite Scottish Single Malts.
