"Western Australia's First Single Malt Whisky"
Limeburners Single Malt Whisky is named after a local area close to the Distillery. Limeburners Creek was named after the Lime burning process that was once performed in this area by convicts.
Releasing Western Australia's only single Malt Whisky the Great Southern Distilling Company focus is quality not quantity. We only produce a limited amount of Malt Whisky, using time honoured techniques and the finest local ingredients.
Our spirit is born from a pristine environment, in a beautiful corner of the world, Albany.
- Western Australia's Great Southern Region-
We chose Albany as there is an abundance of Barley, Peat and pristine clean Water. Just as importantly, the cool marine environment is ideal for maturing whisky slowly and quietly.
We release only individual barrel expressions of Single Malt Whisky.
Each expression is different.

Malt 3 43 % abv RRP $125
M3 is matured in a refill house Brandy Oak Cask and finished in an American Oak Bourbon Barrel. M3 is medium coloured and very smooth with strong malt, vanilla, caramel and butterscotch aromas.
Malt 6 43 % abv RRP $125
M6 is matured in a refill house Brandy Oak Cask and finished in a 200L French Oak Pinot Noir Barrel. M6 is medium coloured and smooth with strong malt, vanilla, herbal and butterscotch aromas.
Malt 27 43 % abv RRP $125
M27 is matured and finished in a 200L American Oak Cask. M27 is medium-light coloured and shows strong smooth malt characteristics along with pear and subtle American oak, coconut and vanilla aromas.
Malt 23 Cask Strength 61 % abv RRP $200
M23 is matured in a refill house American Oak Brandy Cask and finished in two 100L ex Bourbon Casks. M23 is medium coloured and shows fine American Oak characters with vanilla, coconut and a dry finish. Mix with a dash of water just prior to drinking to unleash the full flavour of the malt.
Limeburners Whisky Liqueur 35 % abv RRP $70
Our whisky liqueur is made from our international award wining Limeburners Single Malt Whisky and blended with secret herbs and local Karri Honey. The liqueur has a medium to light colour and shows subtle herbs and fruits along with the unique aromas of Western Australian Karri honey.

Limeburners Single Malt Whisky - Western Australian History
We are the only Malt Whisky Distillery in Western Australia. In April 2008 we released the first (legal) Single Malt Whisky in Western Australia's history.
Our first release
was from "Barrel M2
" - the second barrel of Whisky we ever filled. This Whisky displays fantastic complex characteristics and was awarded a Bronze Medal
at the 2008 International Wine and Spirits Show in London
. For our first release Whisky this is an outstanding result.
There were only 338 hand numbered bottles in our first release, and we sold out
in less than 5 weeks. (We do have 20 bottles stored safely away in our "Whisky library", but none of these are intended for retail sale.) Our first release went to Australia, the US and Europe, and final prices were up to AUD$500 a bottle - which reflects the scarce nature of this truely Premium Single Malt Whisky.
We only release Single Malt Whiskies from carefully chosen individual barrels. This makes each of our Whiskies unique and available in strictly limited quantities. Our second release - Barrel M5 has also sold out.

The Equipment
By world standards we are a tiny operation... which is the way we like it.
Our 2 Whisky Stills, an 1,800 litre Wash Still and a 580 litre Whisky Spirit Still, are in operation in our Albany distillery. Our Whisky Stills are traditional Whisky Copper Pot Stills and were custom made in Hobart, Tasmania, by Australian Still makers Knapp Lewer. We selected the parameters for these Stills to achieve a particular Spirit profile. This decison was made after lengthy research on Stills used by the distilleries producing our favourite Scottish Single Malts.
